What is the difference between Paitan and Shoyu?
Both start as the exact same Hida beef bone broth, using the same ingredients and process up to a point. Paitan is a rich, milky bowl made by applying high pressure to lock in the umami of the Hida beef fat. Shoyu is a clean, clear bowl created by separating the fat and highlighting only the pure umami of the bone marrow.
